The Southern Hoggers competition BBQ team was established in 2015, but Pitmaster Norm “Jimmy Korn” LaChapelle has been cooking on the Memphis Barbecue Network circuit since 2004.
Norm was the rib cook for the Victory Lane BBQ team, which has picked up more than 40 Grand Championships, as well as Memphis Barbecue Network’s Team of the Year numerous times. He also helped in the Shoulder and Whole Hog categories alongside teammate Heath Riles.
The pitmaster has also been seen on the Food Network, Travel Channel and Destination America. In 2013, he starred with three other teammates in a nationally broadcast BBQ-themed commercial for Bank of America called “Lil’ Norm’s Que Crew.”

Southern Hoggers’ smoker of choice is the Pro Competition Hog model by Backwoods Smoker. A 50 gallon water trough in the cooker heats up to provide moisture in the cooking chamber, which in turn produces tender meat. The team loves it so much they have two of them.
There’s nothing like the challenge of getting a pork loin, ham and shoulder to perfect internal temperatures. But for Norm and Southern Hoggers, their favorite meats to cook are whole hog, pork ribs and pork shoulder, in that order.
For their long whole hog cooks, the team uses B&B Competition Char-Logs, which help with airflow due to their unique design.
GREATEST BBQ ACHIEVEMENT
Norm’s biggest accomplishment in BBQ has been to walk the stage three years in a row at the prestigious World Championship Barbecue Cooking Contest Memphis in May.
Southern Hoggers beat out tons of talented teams and made it to the finals at Memphis in May in Whole Hog. The Hoggers have also won 8th and 4th place in the hog category.

Next year will be another big one for the Hoggers, when their competition sauce and rubs will come to market.
