MATTHEW STAUNTON’S LOVE AFFAIR WITH BARBECUE STARTED JUST LIKE HIS PREFERRED COOKING METHOD: LOW AND SLOW.

He always loved cooking from a young age, but the barbecue he enjoyed while growing up — like family roasts cooked on a Weber Kettle or chicken grilled directly over charcoal — had little in common with his true love: slow-smoked BBQ.

It wasn’t until five years ago that the “barbecuer extraordinaire” discovered the low-and-slow barbecue technique. Soon his addiction was born. He helped create the Smoking Coals Barbecue team a few years after that and hasn’t looked back since.

For Matthew, barbecue has become an important part of his life. It’s about friends, constant learning and helping guide others who are just getting started on their own wood-fired journey

Whether cooking in the backyard or heading off to BBQ war, Matthew relies on the MGrills lineup. 

“Tank” his M1, gets all the low and slow barbecue. 

When it comes to Steak Cookoffs, his MGrill’s M16 always has the competition running scared. 

For grilling and searing, the portable C4 never misses a beat.

Lamb is a specialty for Matthew and Smoking Coals Barbecue, stemming from a love of cooking the meat at home. The team has more trophies for lamb than any other competition category.

When it comes to lamb, Matthew just can’t get enough, whether it’s a lamb shoulder or a rack of lamb “lollipops.”

Smoking Coals Barbecue, based in Sydney, Australia, started in 2015 with a mission of “all for fun, and fun for all.”

When it began, the team had many years of experience cooking over wood and charcoal. That training helped them thrive in the Australian competition barbecue scene and beyond. It didn’t take long for the worldwide BBQ community and media to take notice of the group of friends who grew together to become a competitive powerhouse.

What was once all for fun is now a way of life.
