KENDAL ADAIR GREW TO LOVE COOKING AT A VERY YOUNG AGE AND THAT JOY CONTINUED TO WEAVE ITSELF INTO THE FABRIC OF HIS LIFE INTO ADULTHOOD. AS A KID, KENDAL WOULD WALK AROUND THE HOUSE REPEATING THE CATCHPHRASE USED BY THE HOST OF HIS FAVORITE TV SHOW, EMERIL LAGASSE: “BAM!” HE’S JUST AS ENTHUSIASTIC ABOUT FOOD NOW THAT HE’S GROWN UP.

That early love for cooking drew out something special that helped shaped the young man he is today. Kendal is hooked on food, cooking and competition. In adolescence, Kendal entered the competition cooking scene, winning second place in the Chicken category at his first event. Later that year he requested a wok for Christmas. His family was eating Chinese food for a month.

In recent years, Kendal has served as Head Rib Pitmaster for the heralded Boar’s Night Out Championship BBQ team and given back by taking part in numerous fundraisers and eight deployments with the Operation BBQ Relief disaster relief organization.

Now, Kendal is a father and that has also shaped his life. He and his fiance teamed up recently to form the Smoked N Spiced competition team. Now Kendal and his family hit the circuit together.

Kendal has tons of grills and he loves them all. While he’s a low-and-slow kind of guy, he’s been playing around lately with hotter and faster cooking.

For its ease of use, durability and mobility, Kendal often uses a PK Grill at competitions. He’s also setting his sights on cooking competition ribs on a Red Box Smoker and starting to play around with drum smokers.

He’s also got a special fondness for Ole Hickory Pits, which is his go-to when it comes to smoking the big meats, like brisket.

Being a food fanatic from such a young age, Kendal has lots of preferences for what he likes to cook.

Steaks are of particular interest for Kendal. He prefers the tenderness of filet for eating, while he often goes with ribeye for competition cooks. He plans to participate in 25 to 30 steak cookouts this year. Kendal goes heavier on seasoning during competitions and enjoys the tastes of “White Lightning” from Boar’s Night Out and the “Cash Cow Beef Rub” from Big Poppa Smokers.

At home, Kendal and family eat a lot of fresh fish, like red snapper and grouper. Just recently he traded some deer meat for lobster tails with friends in Florida. One of his favorite dishes incorporates lobster — a four-cheese lobster macaroni. Pair that with a good filet of beef and Kendal is in food heaven.

ABOUT SMOKED N' SPICED

The Smoked N Spiced competitive cooking team is a family affair. Kendal and his fiancé Sarah Bechel formed the team after they had their baby in 2015. After some contemplation they both decided they would compete as one. When his little girl is old enough, he hopes she’ll join the family business and BBQ alongside them.

The family also offers catering services and teaches cooking classes. In time, Smoked N Spiced plans to begin offering their own line of seasoning and other products online in the future.

GREATEST BBQ ACHIEVEMENT

While he’s won many big awards at cooking competitions — individually and with Boar’s Night Out — it’s not the honors that Kendal cherishes the most.

Being recognized for his cooking skills means a lot to Kendal, but one of the greatest things he’s ever accomplished is volunteering with Operation Barbecue Relief. Since taking part in his first deployment with OBR in 2012, he’s gone back time and time again to help the organization provide lovingly cooked food to those affected by disasters.

His most recent deployment with OBR was last year in the Houston area for Hurricane Harvey. There, he and other volunteers helped serve more than 370,000 BBQ meals in 11 days. Giving back, including his fundraising work for Shriners International, is near and dear to his heart.
