KATHY PULLIN PUTS A BIT OF HERSELF IN EVERYTHING SHE COOKS. WITH LOTS OF LOVE AND SOME SASS TOO.

Her BBQ draws inspiration from the places Kathy has lived, from the East Coast to Kansas to Texas. After moving to the Lone Star State in 2002, Kathy started coming into her own. Her personal BBQ journey started small, but has only grown over the years. The flavors she has developed over her life come from the heart. She puts passion and experience in every bite.

Word of Kathy’s cuisine has spread far and wide. Maybe you’ve seen her on TV locally in San Antonio on her “Grillin’ with Kathy!” news segments or nationally on the Food Network. Since stepping out on the public barbecue stage at her first competition during the American Royal World Series of Barbecue Open in 1994, Kathy has worked to be her true self and serve the best food possible.

Her Pullin Premium BBQ provides catering services to Texas and surrounding states. Since starting that business in 2011, Kathy has brought the Texas BBQ experience to happy customers all over the region.

Kathy’s “big beast” smoker is an 8-foot-long converted propane tank with a 2-foot-long firebox. She’ll use B&B Pecan Logs and Competition Char Logs during her cooks and is also a fan of cherry wood.

She’s also in love with her Pit Barrel Cooker and has racked up some tremendous cooks on that “hook-and-hang” device.

In the hot Texas summers, Kathy prefers to cook fast and simple — but still tasty — meals over charcoal, like steaks and hot wings.

You can cook anything you want on a barbecue grill, something Kathy is always reminding people. Experimenting is all part of the fun. It’s all about thinking outside the box

Kathy loves the “art of imperfection” of BBQ.

She’s well-known for her pulled pork, a dish she’s mastered over her nearly 30 years of barbecuing. She often serves that in sandwiches she calls “Little Sassy” or “Big Sassy,” a reference to her Sassy brand, which includes the award-winning “Sassy” BBQ Rub that has appeared on television and been used at competitions. Her food is often sauceless, but always sassy.

Another speciality Kathy loves to cook is her candied smoked pork belly. She seasons it with raw sugar and kosher salt and renders the belly like ribs — with the fat-side up, cooking it low-and-slow until it caramelizes. It’s meat decadence on a stick.

GREATEST BBQ ACHIEVEMENT

One of the biggest compliments Kathy Pullin ever received was from “Big” Moe Cason. The champion Iowa chef found her at the San Antonio Stock Show and Rodeo Bar-B-Que Cook-Off to specifically try the pulled pork people had been raving about. He was blown away.

Moe told Kathy, “Honey, you put way too much love and attention in your food to do competition. You need to go to catering where the money’s at.”

Since then Kathy has gone full-time barbecue, leaving her career in the insurance industry to pursue her passion. Her family and friends, like Moe, have helped guide her along on her exciting journey.
