The Texas pitmaster has spent more than a decade refining his craft while proving his skills on the competition circuit. The massive growth of his ever-popular Up in Smoke BBQ catering business led to Junior and his family opening up the Up in Smoke restaurant in 2018 in Midland, Texas.

Junior has built a fanbase not just for his food, but for his personality. His fans cheered him on as he won the title of Texas champ on Destination America’s “BBQ Pitmasters” and again when he returned for an all-star season. The long hours have all been worth it as Junior gets to do what he loves every day. And that’s cooking.

Junior Urias has a variety of toys and he loves them all. His favorite cookers range from old-school backyard grills to open fire rotisseries to his trusty Myron Mixon Smokers.

Whether he’s grilling or smoking, there’s no one right way to cook, so Junior prefers having options so he can always aim for perfection. Junior’s backyard is full of cookers, including ones made by Weber, J&R Manufacturing, Ole Hickory Pits and M Grills.

If it’s made over a fire, Junior knows how to cook it. While he loves smoking meats, his true passion is grilling. Whether it’s surf or turf, Junior loves cooking it.

Whole hog has been of particular interest to Junior and the techniques of that cooking style have caused him to begin thinking about roasting a whole cow one day. While his tastes range far and wide, one of Junior’s favorite meats to cook is the Texas classic: smoked brisket.

ABOUT UP IN SMOKE BBQ

In a decade-and-a-half, word has spread in Texas and beyond about Junior’s barbecue flair.

Starting as a catering business, Junior eventually opened up his own BBQ joint in the summer of 2018 to rave reviews. The catering side of Up in Smoke is still going as strong as always, with as many as four catering gigs a day.

Up in Smoke BBQ is a true family business. Junior’s wife, kids, mother-in-law, uncle and other family and friends all have lent a hand to make his BBQ dreams come true.

Junior has many things to be proud of, including his catering business, restaurant, and television appearances. For him, some of his top successes include earning the BBQ Pit Masters Texas Championship, developing Juniors’ Rub For Grub Seasoning and opening Up In Smoke BBQ – Midland Texas.
