JAMES HAS BEEN BARBECUING FOR OVER HALF OF HIS LIFE. AFTER WATCHING HIS UNCLE RONNIE FOR YEARS ON THE SMOKER DURING HOLIDAY GATHERINGS, HIS UNCLE GAVE HIM A RIB LESSON. IT’S BEEN 21 YEARS AND HE HAS NEVER LOOKED BACK.

James got into competitive barbecue 12 years ago with his cousin Matthew after being inspired by holiday cookouts with his uncle many years before. He has since won numerous Grand Championships and hundreds of other awards.

He is currently the head cook for Stockyard Landing (new team name in honor of the history of his home team), Aporkalypse Now – NOLA (Hogs For The Cause), and Bluff City Smokers (Memphis In May). James is also a BCA (Barbecue Competitors Alliance www.bcabbq.org) competitor and competition class instructor.

James has over 15 grills and smokers. Some of his favorites are the PK360, Icon Grills 700, Ole Hickory CTO, and some drum smokers that he has built.

Using homemade drum smokers gives James a unique flavor profile to his barbecue and lets him experiment with different techniques, smokes and temperatures.

Inspired by his uncle, Jame’s true speciality is ribs. However, he also likes to cook classic comfort foods from his home state of Louisiana. This include Cajun and Creole foods like gumbo and jambalya. These foods are packed with spices, meats and shellfish.

You can also find James experimenting with other flavors and cuisines from around the world. One of his recent favorites is to cook Mexican cuisine with a barbecue twist. He likes to keep his BBQ roots, but bring a global perspective to his food.

ABOUT STOCKYARD LANDING

Stockyard Landing is James’s new team name. This name represents his home, which is the location of the Stockyard Landing, a historically significant place in the area. The community is officially known as Arabi, but got the nickname from the numerous stockyards and slaughterhouses in the area.

Previously, James lead Master Basters. Though this was an extremely successful team, they were perhaps not very marketable to a mainstream audience due to their risky team name.

GREATEST BBQ ACHIEVEMENT

With cancer running in his family, Hogs For The Cause (www.hogsforthecause.org) hits a little closer to home. This MBN contest is one of the biggest BBQ contests in the country, and his team, Aporkalypse Now – NOLA, has helped raise over 2 million dollars for kids battling pediatric brain cancer. As far as the cooking part, James is the only head cook to ever win back-to-back Grand Championships at this contest.

In addition to this great cause, James has also won numerous Grand Championships and hundreds of other awards and is a BCA (Barbecue Competitors Alliance competitor and competition class instructor.
